Cherries Jubilee

Serves 4

16 oz. Cherries in juice
1 Tbl. Cornstarch in 1 Tbl cold water
1 cinnamon stick
1 orange zest
3 oz. Brandy
1 tsp. Vanilla extract
1 Tbl. Butter
1 pt. Vanilla Ice Cream

Drain Cherries, save liquid.
In saucepan, place cherry juice and heat over high heat until it boils. Thicken with the cornstarch. Let cool.
Over medium heat place saucepan, add butter. Once butter is melted, add cinnamon stick and vanilla. Cook for 2 minutes. Add cherries and cook for 2 minutes. Add brandy and orange zest, cook for 3 minutes. Add cherry liquid, bring to a boil and remove. Serve over vanilla ice cream.
