Serves 4 4 boneless chicken breasts, 8 oz. each, with skin 3 cups fresh spinach, chopped 3 T. toasted pine nuts 1/2 boursin cheese wheel salt & pepper to taste Preheat grill Mix the spinach with the pine nuts and cheese and season to taste. Stuff the spinach mixture under the skin on the breasts, season with salt and pepper. Place the breasts skin side down on the grill and cook for 4 to 6 minutes. Once skin is seared, flip the chicken and cook until done, approx. 12 minutes. Serve |
