Rotisserie Turkey/Orange Cilantro Salsa

Serves 6

4 lb. Turkey breast2 T. olive oil2 T apple rub
3 ea. Oranges, segmented
1 T. chopped cilantro
1/2 red tomato, diced
1 ea. jalepeno, diced
1/4 red pepper, diced
1/4 green pepper, diced
1/4 red onion, diced
1 T. red wine vinegar
salt and pepper to taste

Rub Turkey with olive oil, season with apple rub. Place on rotisserie and cook at high heat for 20 minutes. Turn to low, cook, and additional 50 to 60 minutes. Remove and let cool for 10 minutes.

For Salsa: mix all ingredients. Season to taste. Let set for 30 minutes, recheck seasoning.
