Cedar Plank Salmon, Crispy Potato Cake, Spinach, B

8 pc. Slamon
2 cups Spinach
8 pc. Potato Cake
4 Sundried Tomatoes, julienne
1 T Olive Oil
1 T Garlic, chopped
1/4 cup white Wine
1/4 wedge Boursin cheese
1 Cedar Plank
Soak cedar plan for 30 minutes. Place on grill over medium heat. Season slamon with salt and pepper, place salmon on plank. Cook for 7-8 minutes or until done. Heat medium skillet over medium heat, add olive oil, spinach and garlic. cook for one minute then add white wine and sundried tomatoes. Cook for 1 minute, drain excess liquid, fold in boursin cheese and season with salt and pepper.
To assemble: Place small amount of spinach mixture on center of plate. Place one piece of salmon on top of spinach, place one potato cake on top of salmon.
